MULTIVARIETAL OR MULTICULTIVAR Extra virgin olive oil (blend)
The Italian heritage of biodiversity is truly unique and in particular in olive growing. Over 600 cultivar varieties (varieties) have been surveyed which produce olives with different characteristics and from which completely different extra virgin olive oils are extracted, both in terms of chemical and organoleptic structure and in terms of flavor and taste. We find the differences in the quantity of polyphenols contained in the EVOO, the acidity, the more or less intense flavors and aromas, in others they are perhaps lighter and more delicate; in some extra virgin olive oils bitterness and spiciness prevail in other EVOOs perhaps the scent of grass, artichoke or tomato. This is the reason why many mills produce multi-varietal extra virgin olive oil by skilfully mixing the various cultivars and providing us with a genuine product of the highest quality and pleasant on the palate.
