The Organic Extra Virgin Olive Oil from the Agritourism Farm “Miracco” is born in the heart of Santa Sofia d’Epiro, on the hills of Cosenza in Calabria. Here, between rural tradition and agricultural innovation, a 100% Italian extra virgin olive oil takes shape—authentic in character and excellent in quality—produced through organic farming strictly certified by BIOAGRICERT.
Made from carefully selected olives of the Dolce di Rossano, Carolea, and Roggianella varieties, this oil embodies the essence of its territory. The olive trees are cultivated with environmentally friendly methods: organic farming with natural ground cover and polyconic vase pruning, ensuring healthy plants, balance, and a natural, high-quality production.
Harvesting takes place directly from the tree canopy, using different techniques depending on the production batch: a remote-controlled telescopic-arm machine with a rotating brush designed to minimize stress on the trees, or a more traditional manual harvest of early-ripening drupes. In both cases, the fruit is treated with the utmost care.
Milling is carried out within 12 hours of harvesting in a continuous-cycle mill, following the principles of organic agriculture established by Regulation EC 834/2007. The strictly cold extraction process preserves aromas, antioxidants, and all the nutritional properties of the oil. The product is not filtered: it rests in stainless steel tanks for natural decantation, then is racked after about four months and bottled in the farm’s own facility.
The result is a biological extra virgin olive oil with a green color and golden reflections that later evolves into a golden yellow with bright green hues. Its very low acidity (0.2) confirms its high quality.
On the nose, it releases an intense fruitiness with delicate almond notes and herbal hints of wild greens. On the palate, it is coherent and harmonious: a balanced interplay of bitterness and spiciness, pleasant and persistent, capable of enhancing any dish with personality yet without overpowering it.
Perfect in the kitchen, Miracco’s organic extra virgin olive oil is ideal for seasoning roasted meats, fish, legume soups, cooked and raw vegetables, salads, wild herbs, bruschetta, and traditional Mediterranean first courses.
