The best period for olive harvesting is generally October, although some producers anticipate the harvest at the end of September, but the important thing is not to go beyond November 30th. However, everything depends on the climate, the area where the olive grove resides and the variety of olives which are the factors that determine the harvesting period. The new extra virgin olive oil is recognized by an intense flavor and a greater tingling than the old oil, a sign of the presence of the healthy nutrients of genuine oil. To produce a liter of quality oil, 6-7 kilos of olives are generally required and their pressing must take place no later than 24 hours after harvesting.
